Plant Based Sushi

Vegan is not a kitchen, the trick is to make a kitchen vegan. That is the starting point of Plant Based Sushi at Admiraal de Ruijterweg. She had seen enough of cucumber lemur, so alumni Claudia Deken (Class of 2019) turned her frustration into a passion: “I just needed sushi.” Whoever enters wouldn’t immediately guess that sushi is served here. There is little Asian to discover in the interior, which mainly consists of hip second-hand furniture and many houseplants. The menu also has Western features. Take the Blue Ocean Roll, for example, filled with sauerkraut, vegan bacon, and avocado. The Green Wasabi Roll is more Asian, with crispy vegan fish, pickle, cucumber, and wasabi mayo.
